This week, I am trying out having beans several nights for dinner, prepared different ways. They are healthy, and when coupled with brown rice make a complete protein. In addition to being nutritious, they are frugal and we are pinching our pennies right now.
Breakfasts: biscuits and gravy, baked oatmeal w/ apples (look for the recipe later this week!), scrambled eggs with sausage & toast
Lunch: grilled cheese sandwiches w/ carrot sticks, leftovers, cheese & pinto bean quesadillas
Dinners:
Monday~pintos w/ ham, cornbread
Tuesday~spicy black beans w/ brown rice
Wednesday~hamburgers w/ homemade fries
Thursday~ chili w/ cornbread
Friday~ Farmhouse Chicken [made w/ turkey] from the freezer
Saturday & Sunday~ dinner with family at the farm
