What we're eating this week, a question, and a deal

It has been a busy few days around our house! We spent most of the weekend with family, which was really fun, but I'm looking forward to setting back into some normalcy (including cleaning and more naps for little people!) tomorrow after running errands for a good chunk of the day today.

Here's what we have on our menu this week:
Breakfasts: smoothies, eggs with toast, pancakes

Lunches: smoothies, leftovers, sandwiches, hot dogs (free of nitrates/nitrites, fillers, by-products, and artificial colors)

Dinners:
Monday~BBQ chicken, corn on the cob, baked beans with family
Tuesday~"Not-Sagna" Pasta Toss, salad
Wednesday~Chicken Divan
Thursday~ Shredded beef tostadas
Friday~snacks at the home school ball
Saturday~homemade pizza, sauteed green beans
Sunday~Dinner at the farm

And now for the question. I need some cool summer dinner ideas (preferably meals that don't heat up the kitchen) other than meal salads, which Ben does not care for. Any suggestions from y'all would be appreciated!

This is normally a "salad" but its great served in tortillas as tacos as well... you just take black beans, avocado, corn(roasted would be great!), diced tomatoes, cilantro, lime juice and olive oil and toss it together. You can add/subtract some ingredients as well...just whatever sounds good!

    Another thing we really like is shrimp wraps. I know shrimp is expensive though so you can do chicken as well and just cook it ahead of time and freeze. I make a little "do it yourself" bar with things like chopped green onions, bean sprouts, tomatoes, feta cheese, bell pepper, pesto sauce (I buy the kind in a tube that is concentrated and you add olive oil to it). Everyone can just go by and put whatever sounds good on their wrap.

  2. One more idea!

    There is a restaurant around here that serves this dish and its supposedly delicious even though I haven't tried it personally. Its just angel hair pasta, diced tomatoes, fresh basil, olive oil I think, and then a big spoonful of ricotta on top.

  3. Being in VA as well so im in the same boat as you. I have found that for our family using the crockpot to make meals is working thus far. I love the blog crockpot cooking 365. I get some great ideas from her. I am now trying to find other ideas as well besides salads and crockpot for the warmer than normal temps in VA. The grill is another great idea but we can only afford so much meat to use on the grill. Thanks for asking a great question.

  4. We eat alot of sandwiches when it's hot. Tostadas are good and don't require alot of work. Just get tostada shells and layer with refried beans (canned), shredded chicken, shredded lettuce, tomato, cheese and salsa.
